Grapes for early wine (Federweisser / Suser)

Nature at its best!

Not only do I make beer, but also use the fruits which nature provides.  One of my favorite drinks in the fall is Federweisser.   This is made by collecting and washing the grapes (water only so the yeast is still on the skins), crushing the grapes (not pressing), and leaving for about 3-4 days in a covered tub until fermentation starts and some of the color from the grape skins colors and flavors the grape juice.  Then the grapes are pressed and put into a 5-gallon, sealed container.  After a day or so, the juice is naturally carbonated, sweet, and contains a couple of percent of alcohol.  Great with onion cake!!!
